I got adventurous one day and decided to try some tomato wine. I went to the local market and bought a case of really ripe tomatoes, mixed varieties and gave it a shot. I thought it would be a blush wine but it ended up a white wine and boy was it delicious!
Here is the recipe I used:
15 Lbs. tomatoes
5 cups raisins
4 gallons water
8# Sugar
12 1/2 tsp Acid Blend
1-1/4 tsp tannin
5 tsp Nutrient
5 Campden Tablets - crushed
1 pkg yeast
My starting SG was 1.070. I brought it down to 990 and let it set for a 3 months to age before bottling it.
The humorous part if this is I didn't have a scale at the time but had a dog that weighed 15 lbs. So I held him in one arm and my crushed tomatoes in the other to make sure I had enough tomatoes. The wine turned out great!
